Fermenti Artisan Ramp Kraut is handcrafted. With a focus on developing personal relationships with family farms, we use the finest organic cabbage. Our kraut ferments for 10 days in German style stoneware crocks. We then cure the kraut in refrigeration for several weeks to allow the flavor to further develop.
Our Ramp Kraut is a seasonal ferment and available for a limited time. Ramps are wild leeks, and the ramp harvest each spring is both exciting and brief. Their distinct flavor is garlicky yet sweet. This is a favorite kraut for lovers of garlic and onion.
